President's Day

Monday I had the day off of work and it was glorius!

I woke up at 6:15 (nearly 2 hours later than a normal day), ran 4 miles, and showered before either David or Mac were out of bed.  I love getting that done before others are awake.

Mac woke up with a little snuffly nose, but acted fine and didn't have a fever so we decided to go about our plans.

We met our friends Ace and Rochelle at the Science Center, where Mac loved the Discovery Room between meltdowns.  And my meltdowns, I mean literally melting the the floor in a sobbing heap whenever I told him no or tried to redirect him.

Sigh.  Thank goodness he's cute.





After that, we went and got a much-needed haircut.  This was Mac's first haircut without David coming along and I decided to just go to GreatClips.  Alone, I told the stylist that I wanted to save the curls in the back.  I think he looks amazing, but David has been arguing that Monster Man has a mullet.  And, really, he does...but it's so cute! 

I'll try to get better pictures tonight.

After that, we headed home for a much-needed nap after lunch.

Seriously, that kid needed a nap.

Then we went to target...because I am AMAZING at finding fun engaging activities for my child.  And we needed some things.

Mac's final activity of the day was his last swimming class.  Mac received a certificate, which I'm pretty sure just certifies that he didn't die.  But man... that kid loves the water.  No fear.





I finished up the evening by going to my Core Group through church.

It was a great day--one that I keep describing when trying to convince David that I should be a stay-at-home mom :)

Meal Plan Monday!

My freezer is looking a little pathetic, so I made some meals I could also freeze this week.

Sunday: Buffalo Chicken Stuffed Shells
Monday: Slow Cooker Cream Cheese Chicken Chili (David really liked this but requested that now I call it Creamy Chicken Soup because he can't manage the massive name)
Tuesday: Book Club!  We're having Brinner so I'm making a quiche and trying out a wine smoothies.
Wednesday: Leftovers
Thursday: Telluride Black Bean Tortilla Bake
Friday: Leftovers
Saturday: Potluck!  I'm making Ravioli Lasagna

This video is a couple of weeks old, but I couldn't resist sharing it with you. 

Mac LOVES crayons.  He wants to carry them around and try to eat them all the time.  It's kind of cute, but Mac has unfortunately lost free-range crayon privileges.  I came home one day and found crayon on the door, 3 walls, and the refrigerator.  Now, my budding artist only gets to color when supervised or strapped into his chair.  Don't feel sorry for him--it's still at least once a day.

Also, the music in the background is from a children's music app on Pandora.  I have no idea who or what is singing, but Mac likes the station.  I'm just grateful that it wasn't the REALLY annoying song about not biting your friends.

Meal Plan Monday


Sunday: I had planned on doing Sweet Potatoes, Chicken, and Kale, but I had a DE-LISH piece of cake at a birthday party and decided that I wasn't hungry for a "real" dinner.  We scrounged on some leftovers.

Monday: BBQ Chicken Corn Soup (I had scheduled leftovers for this night, but I'm thinking I should make something--thank goodness for backup meals!)

Tuesday: Lemon Pepper-Shrimp and Ceasar Salad

Wednesday: Mushroom-Barley Risotto, Salad

Thursday: David's favorite meal, Spaghetti and Turkey Meatballs, Asparagus

Friday: Leftovers

Saturday: Out to celebrate Valentine's Day!

Mac and I went to the park yesterday (highs were close to 60!).  I love going to the park with him.  We usually walk a mile loop before he gets out to play--and I had the genius idea to turn on my kid's Pandora station while we were walking.  He enjoyed himself SO MUCH more.


When we got to the slides, he surprised me by going down feet first.  I'm fairly certain he wasn't doing that last time we went to the park together.





 He also REALLY surprised me by going for the big kid's slide.  I don't know if you can tell by the pictures, but on this equipment there are a few steps, a landing with a "little kid" slide, and another higher landing with the "big kid" slide.  Mac watched another boy go up the the higher level  and then just did it.  It. was. amazing! 

Seriously, the kid has no fear.  I don't have any pictures of the big kid slide because I was busy worrying about his safety... soon, though, I might feel confident enough to take a picture.

Meal Plan Monday



Sunday-- It was the Super Bowl!  While I don't care for football, I do enjoy socializing and eating.  We had a few (read: 3) friends over and I went a little overboard on cooking.  We had deviled eggs, buffalo chicken dip, three-bean turkey chili, homemade chex mix, a cream cheese peanut butter chocolate chip football, and a veggie platter.

Monday--We're eating leftovers.  I mean, come on.  Did you see what I cooked on Sunday?

Tuesday--Black Bean and Sweet Potato Enchiladas, Southwestern Salad

Wednesday--Crock Pot Chicken Cacciatore, Cooked Carrots

Thursday-- Freezer meal, likely Telluride Black Bean Tortilla Bake

Friday--Leftovers

Saturday--My parents are coming to town, so we're going to either eat out or order in.
